Question regarding growing zucchini...?

A few days ago I planted some Zucchini (Burpee Limelight) in those Jiffy starter peat cups. I noticed today that the roots (about an inch long) are coming out from the bottom of the cup but no seedlings growing out the top. Should I just go ahead and plant them in their permanent container homes now? I have to keep them indoors for yet another few weeks (I'm in Zone 6)
